Mushroom & Tomato Egg Wraps
Enjoy a clever and nutritious twist on breakfast with these savory egg wraps, packed with hearty mushrooms, sweet cherry tomatoes, fresh parsley, and wholesome oats.

Ingredients
- 500g pack closed cup mushrooms
- 4 tsp rapeseed oil (plus 2 drops)
- 320g cherry tomatoes (halved, or 8 tomatoes cut into wedges)
- 2 generous handfuls parsley, finely chopped
- 8 tbsp (40g) porridge oats
- 10 eggs
- 4 tsp English mustard powder (made up with water)
Instructions
- Cook Mushrooms and Tomatoes: Thickly slice half the pack of mushrooms. Heat 2 tsp rapeseed oil in a non-stick pan, add the mushrooms, stir briefly, and fry with the lid on for 6 to 8 minutes. Stir in half the tomatoes and cook for 1 to 2 minutes more with the lid off until softened.
- Make Egg Wraps: Beat together the eggs thoroughly with the parsley and oats. Heat a drop of oil in a large non-stick frying pan, pour in one-quarter of the egg mix, and fry for 1 minute until almost set before flipping over like a pancake.
- Assemble and Serve: Tip the cooked egg wrap out of the pan, spread with a quarter of the mustard, spoon a quarter of the mushroom and tomato filling down the center, and roll up. Repeat to make a second wrap using another quarter of the egg mix and filling (saving the remaining mixture for the following day if following a healthy diet plan).
